There’s definitely hidden depths to Smoke & Mirrors’ revamped cocktail menu. Dubbed The Playful Eye, it features ten progressive libations that marry unusual flavour combinations with creative culinary techniques – a celebration of head bartender Yugnes Susela’s passion for cooking.
Standout concoctions include the eponymous Smoke & Mirrors (S$24), the bar’s signature tequila-based cocktail. Redolent of herbs and spices, it’s served with an edible garden – think “soil” made from raw pistachios and cocoa powder, and apple “rocks” coated with kaolin clay.
Inspired by the prominence of coconuts in Kerala culture, God’s Own (S$24) blends junmai sake (made only with rice, water, yeast and koji) with the freshly grated fruit. Coconut syrup and rum are then added for further depth of flavour. The cocktail is garnished with a slice of potato, which is topped with pistachio cream and lemon zest for an intriguing interplay of textures and tastes.
M.C – N.L (S$24) stands for “My Creation – No Limit”, and it lives up to the name. The cocktail pushes the envelope with an inspired blend of cacao-infused vodka, sweet vermouth, pineapple juice, coconut nectar and pu’er tea. It’s then garnished with a sprig of cinnamon basil and served in a miniature flower pot.
Then there’s also Cloud & Air (S$22), a whimsical aperitif influenced by the bar’s panoramic vistas. The fruity tipple mixes white port, honey, apricot brandy and lemon juice in a champagne flute; citrus smoke is then diffused within the glass to heighten the sensory experience. The finishing touch? A homemade milk meringue that’s as light as air.
Situated on the rooftop of the National Gallery Singapore, Smoke & Mirrors offers an intimate yet sophisticated ambience, plenty of wood and copper tones, as well as sweeping views of the historic Padang and Marina Bay skyline.
